Since vegan recipes don't use animal products, there are a number of "challenges" vegans face when baking.
Here are a few of the most common questions...

Q: Where can I find the ingredients?
A: I wanted the recipes to use ingredients that are easy to find. So most of the ingredients I used can be found at your local grocery store.

Q: How do you get by without using eggs?
A: You don't need eggs to bind everything together when baking. There are quite a few ways to replace them. I've discovered some simple substitutes you can use.

Q: What about butter and milk?
A: Butter is actually very easy to replace... and there are many milk alternatives.

Q: Are vegan desserts healthy?
A: Like all vegan foods, my recipes don't use dairy or other animal products. But, remember, they're still desserts. They're not intended to be eaten all the time.

However, generally speaking, home-baked desserts are often healthier than store-bought varieties because commercial bakeries frequently add chemical additives, artificial ingredients, and preservatives. When you bake at home, you can usually avoid some or all of those "bad" ingredients.

Q: Is sugar vegan?
A: Not all of it. Some brands of sugar use "bone char" in their processing (so they're not vegan). But there are many companies that don’t use that process. With a little checking, you'll be able to find brands that are suitable for vegan recipes.

Q: Do your recipes really taste as good as the originals?
A: Yes! My taste-testers liked my final recipes as much -- and sometimes more -- than the original, non-vegan versions. And remember... NONE of my taste-testers are vegans.

Many of my earlier attempts at "cloning" the originals missed the mark. But I didn't give up. I kept working and altering the ingredients until they were perfect.

I have to admit, I was a bit skeptical at first...

I have been fortunate enough to try many of the recipes that Claire Gosse has put together. Being a bit reluctant of the whole "vegan" thing at first, I was blown away at how amazing every item tasted.

My all time favorite is her peanut butter cups. I still remember telling myself I was only going to have 1 and save the rest for my wife and kids. I then proceeded to finish the entire container of them.

I am not a vegan or even a vegetarian.  I was definitely skeptical when I heard about Claire's "vegan desserts".  So far I have tried her peanut butter cups, her key lime cheesecake and other assorted treats.  

I couldn't tell them apart from the normal grocery store brand...oh except Claire's tasted way better!  I literally have requests from family members to get more of the cheesecake.  I can't tell you what my family thinks of the peanut butter cups though...no way I was sharing them!

If you are having doubts about Claire's food...trust me I had the SAME doubts. One bite is all it takes to quiet them.  Take if from the biggest skeptic out there - this stuff is great!

I’ve been very kindly given a copy of Are You Sure That’s Vegan? and have had a read and I thought I’d share it’s awesomeness.

One of the first problems I faced when turning vegan was dessert. Main meals are usually fine: there’s always something you can have and lots of cookbooks too. But desserts, not so much. Especially trying to replicate traditional desserts that I love like Crème Brûlée and Cheesecake. But, ‘Are You Sure That’s Vegan’ by Claire Gosse kinda makes all that easy. There’s so many recipes, so well presented with beautiful photographs.

I’ve gone through every page and each recipe makes me say “damn, I gotta cook that”! Seriously, the words “Peanut Butter Chocolate Mousse Pie” really excite me!

I would recommend it to any vegan (or non-vegan). It’s also awesome if you’re entertaining: cook your guests a dessert then tell them it’s vegan AFTER THEY EAT IT. That’s always a shock for them…

I've made the chocolate chip cookies :) They were the nicest cookies in the world.

I made them for a meeting and everyone (who isn't vegan) were suprised that they tasted so good. I ♥ changing the opinion that vegan food is bland and boring, because these certainly werent!!!!!!!!

Nutty Oatmeal Chocolate Chip Cookies

A few weeks ago @isitvegan mentioned that he had received a vegan e-cookbook. He was pretty excited to get into this new set of vegan recipes devoted to sweets. He mentioned that he could really get on board with author Claire Gosse’s personal baking philosophy, “I just want tasty vegan desserts that impress my friends and family, vegan or otherwise.” He also approved of the “non-hippy” ingredients: no milk thistle, rose hips, … After all, desserts need to taste delicious, whether they are vegan or not. My personal goal is always to make things that everyone can enjoy.

Anyway, he asked if I’d be willing to use one of these recipes to make some cookies. My response: “Of course!” Here’s a secret you may not know…@isitvegan and I have a bit of a deal going… I cook and he does the dishes. I think we instituted this deal back in college and it’s just something that stuck. His cooking skills may be a bit underdeveloped…but watch out Mr. Clean because his dish washing skills are unparalleled. To be fair, he was the chocolate grater, pecan chopper and errand boy for this recipe test. It’s very hard to make cookies when you have no margarine!

We decided on this recipe for Nutty Oatmeal Chip Cookies and were glad we did. All the deliciousness of a classic chocolate chip cookie married with chopped pecans and filled with the good for you fiber of oats.  

In the past, I have to admit to failing “vegan cookies 101.” They always seem to come out flat and oily. But not these cookies. I think the bulk of the whole wheat and oat flour plus the combination of baking soda and powder made these rise up nicely. They are not overly sweet, and the recipe makes a ton of cookies. I think we ended up with close to 50 decent sized cookies.

We actually made the recipe twice  The first time we shared them at our respective offices (with NO vegans), and they were given rave reviews. The second batch was shared at a house warming party with some vegans, and I can happily say we came home with empty plates. The one modification we made was to dial back the amount of chocolate and nuts from the original recipe, but thinking back I liked the packed-to-the-gills version better.
